Let me know if you think it's rich enough.

shrimp mold

11 oz. cream cheese
3 T. mayonaise
1/2 onion, finely chopped (I use purple onion for the color)
1/2 cup finely chopped celery
1 green or red bell pepper (I use red for the color)
1 lb. or more cooked, peeled, finely chopped shrimp (I boil 'em with Zatarain's crab boil)
1 envelope plain gelatin
2 T. cold water
1 tsp. Tabasco, or more to taste
1/2 tsp. cayenne pepper, more or less to taste

1. mix the cream cheese & mayo
2. disolve the gelatin in the water & heat in the microwave for 15 seconds, then let it cool a little & add to the cream cheese/mayo mixture
3. add all the other ingredients
4. mix well & put it in a mold
5. chill it, couple hours in the refridgerator, turn it out on a platter, serve with your favorite crackers

this stuff is great!
