A hardware option I found for installing wood bunks, hot-dipped galvanized timber bolts:

Looks like carriage bolts with "fins" (instead of a square bit) to dig into the wood.

Maybe y'all already know about these, but it's the first I've heard of them!

EDIT: Aw crap, maybe not, those things are huge-sized! Anyone know of a source for maybe some 1/4" to 3/8" diameter, 3" or so long versions of this?

I've used standard hot dipped galvanized carriage bolts with the square shoulder and it worked just fine. Tightened down and pulled the bolt head flush without spinning loose. Recently I pulled old galvanized bolts from PT side bunks and there was not even a hint of rust after 20 years.
