Half closed loop system for new Merc 5.7

Greetings - new to the forum; thinking this is the correct site to post my questions.

I'm about to install a new Merc 5.7 in my 19' bowrider and would like to install a half closed loop cooling system. I've read in several areas that I will need to use the belt driven sea water pump in lieu of the pump in the stern drive.

If this is so, what to do with the stern drive pump? Can the sea water pump feed the heat exchanger then go to the exhaust manifolds, then the stern drive water source cool the power steering exchanger then go to the elbows, or would this be too "cold" (i.e. water never really warms up).

Also, what degree thermostat should the engine use in a closed loop system?
