What oil do you use to fry the Turkey? I was under the impression that peanut oil was the oil of choice. I went to the local wholesale food place today and was shocked at the price of 4 gal's of peanut oil. It was about 29 smackeroos.

I did buy peanut oil several years ago but did not remember the price. I overcooked the poor bird on that occassion so the final result was dissappointing. The only other time I sampled fryed turkey, someone else cooked it, it was incredibly good but I don't think the subject of what oil type ever came up.

I asked the 'grocer' and he said peanut oil was the oil of choice because it burned at a much higher temperature than others and did not impart the burned flavor to the bird.

It's kinda hard to swallow, cooking one 10-15$ bird then throwing out near 30 bucks worth of oil.

I'm trying to do a 12 lb bird for Christmas day.

Hey Boom,,,I use peanut oil myself,,,If you can strain it after you use it,,,lot depends on the spices you use also,,,put it back in the containers and then into a frig or a cool place,,,most of the time I can get two to three frys out of mine..

Over what period of time CD? In other words what is the longest period of time between frys? And what do you strain it with?

Also what is the indication that it is used up?

I have used it after 7/8 months, but I do keep mine in a frig...and use some cheese cloth to strain mine with,,,
you can tell over time by the smell of the oil, kinda hard to splain,,,when in doubt throw it out....
I cook several birds during the holidays and in the spring along with smoking some birds and briskets for trips to the river.

I use peanut oil. I usually get four or five turkeys or chickens from on batch of oil. I keep mine for 6 months or so and do not refrigerate it. I strain it real well and keep it covered. I haven't noticed any off tastes and I figure nothing dangerous can live in the oil once it its 300+ degrees anyway. If you fry fish - throw it away - trust me. Other than that it lasts for quite a while.

We fried em for about 15 years at my family thanksgiving, quit it a few years ago because of all the mess and the # of turkeys we had to fry to feed everyone.

We would keep the oil for 1 year. 4-5 birds
