Giblet's & Gravy ?'s & rambling's

I was just wondering what others did with all that stuff that come's out of a turky's butt. It used to be just giblet's but I see gravy packet's are also becoming vary common.<br /><br />As for me and mine we make scratch gravy and include the giblet's in that but I do use the gravy packet's at a future date for a meal other than thaksgiving day. (no packet gravy for my bird on this day)

I actually boil it all up with carrots, peppercorns, celery and onions to make stock for my dressing. I buy extra giblets and cut them up and add them to the stuffing as well. If I can't find them at the grocers I use sage breakfast sausage.

The dogs (a.k.a our kids) love them giblets, after all it's thier Thanksgiving Day too.
