Read up on it so you understand how it works..maybe take a few classes or find someone willing to show you the ropes..most sailors enjoy sharing the knowledge......:)

Good on you!
Sailing is alot of fun.
Your easiest bet is to take a course. All sailing club have some sort of training. They usually have an ulterior motive and would like you to join their club and sail in their races. Racing with someone is a really good way to learn to sail. Just finding someone who will take you out will get you started is another way of learning.
I built a boat and taught myself. In hindsight its probably the hardest way to do it but its a real confidence builder. I'm an old fart grandmother type person so you don't have to be superman to do it.

Lately I've been figuring out a new keelboat. Quite a challenge.

Couple different options:
1. purchase an older sunfish / minifish, read up on the internet about the basics of sailing, and head to the lake on a calm day
2. most yacht clubs offer adult sailing nights where they teach you in 420s or lightnings
3. if you are a reliable and dedicated person, offer to crew on a sailing team. be prepared to be rail meat for a couple seasons until you know a bit about sailing.
