Second time, 2017 Crestliner VT17 acts like it is out of gas. Go to fill it and it only takes 8 gallons. What am I missing?

Did it run ok after you filled it ? Not going any further until this is answered as it could be a myriad of things wrong especially with complete lack of info as in , fuel filters have been replaced , primer bulb ,if it has one , is not collapsing and of course engine size make and year would be helpful .

Could be a bunch of issues. What trouble shooting steps have you done?

Runs fine after I filled it. The priming ball is fine, I replaced the fuel filter after it did it the first time. The engine is a 50hp mercury 4stroke (2017).

Thanks

What trouble shooting steps?

Did you check the anti-siphon valve?
Did you check the pickup tube?

Could be leaky/bent Fuel Pickup Tube in the Tank that let air in once the Fuel Level drops below it

What is the Capacity of the Tank?

How tall is the tank? Short tanks only need a bit of bow raise, and a fuel pickup in the bow, to have the fuel pickup tube suck air. With a short tank, you will want the fuel pickup in the stern of the tank.

Capacity is 21 gal
So you have 17-18 gallons of usable gas and if you filled it to the top , sometimes you get a airlock or clogged air vent ( that can also stop - restrict the fuel flow to the engine ) so the handle kicks off before it's filled . You were running on about a half of tank of gas when the issue popped up so probably not the pickup if that's the case . Unless it does it again I think your chasing your tail . You could be replacing all sorts of stuff that isn't the cause of it .

Buddy of mine had this same issue a few years back. Had it at the dealership different times, they ended up putting an electric fuel pump on it and no more issues. It was vapor locking and would not restart, just like it was out of gas
