Thought I would share a few of my favorite recipes.

Baked... Fish Jalapeno Poppers

Fish filets (your choice of specie) cut into; two inch long x two inch wide x one inch thick strips.
1/2 package cream cheese, softened
1/2 cup shredded cheddar cheese
1/2 cup shredded motzarella cheese
2 Tbsp. bacon bits
1/8 tsp. salt
1/8 tsp. chili powder
1 lb. jalapenos, halved lengthwise and seeded
1/4 cup dry breadcrumbs

Combine cheeses, bacon bits, and seasonings.
Spoon cheese mixture "heaping" into pepper halves which have seeds removed.
Roll pepper halves and fish in breadcrumbs.
Place on greased cookie sheet and bake uncovered at 300 degrees for 20 - 25 min.
Watch the oven. When the cheese mixture in the peppers melts and overflows onto the fish... this is a good thing!
Allow to slightly cool before serving.
Serve with sour cream dollop on top with chopped green onions.


Pan Fish Roll-ups

2 lbs. skinless pan fish fillets
10 ounces of asparagus spears
1 can of celery soup
2 tablespoons Parmesan cheese...grated
2 tablespoons crushed toasted almonds
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice
1 teaspoon salt
3/4 teaspoon pepper

Sprinkle both sides of fish with salt and pepper.Cook asparagus and drain.Place 3 asparagus spears on each fillet and roll up.Put a toothpick in each one.Place roll-ups on a buttered baking dish.Combine the soup,lemon juice and Worcestershire sauce and pour over the roll-ups.Sprinkle with Parmesan cheese and top with the almonds.Bake it at 350 degrees for 25-39 minutes until the fish flakes.

Walleye Cakes

2 cups cooked flaking walleye
1 cup cornflake crumbs
1/2 cup sliced green onions
3 eggs,divided
1 tablespoon sherry
1 tablespoon Worcestershire sauce
1 teaspoon sesami oil
1/4 teaspoon salt
1/3 teaspoon pepper
1/2 cup seasoned dry bread crumbs
2 tablespoons vegetable oil

In a medium mixing bowl,combine fish,cornflake crumbs,onions,1 egg,the sherry,Worcestershire sauce,sesami oil,salt and pepper.Divide mixture into 6 equal portions.Shape each portion into 1/2-inch thick patties.

In a small mixing bowl,lightly beat the remaining 2 eggs.Place bread crumbs in a shallow dish.Dip patties first in eggs and then dredge in crumbs to coat.

In a 10-inch skillet,heat vegetable oil over medium heat.Add the patties.Fry for 2-4 minutes,or until golden brown,turning over once.Drain on a paper toweled lined plate.

Serve with lemon wedges,tarter or cocktail sauce.

Damn man, those sound good. I'll have to give them a try. I made shark taquitos. You need oil, shark, and corn tortillas, lol. :D That's about as fancy as it gets here.

Grilled Salmon with Habanero-Lime Butter

1/4 cup vegetable oil
1/2 cup orange juice
3 tablespoons lime juice
1 tablespoon tequila
1 tablespoon grated lime zest
1 tablespoon minced habanero pepper
1 clove garlic, minced
4 (4 ounce) fillets salmon steaks
1/4 cup butter, softened
1/4 teaspoon garlic salt
1 tablespoon lime juice
2 teaspoons habanero pepper, seeded and minced
2 teaspoons grated lime zest


In a bowl, stir together vegetable oil, orange juice, 3 tablespoons lime juice, tequila, 1 tablespoon lime zest, 1 tablespoon habanero pepper, and garlic. Reserve a small amount to use as a basting sauce, and pour the remainder into a shallow baking dish. Place the salmon in the shallow dish, and turn to coat. Cover, and refrigerate for 2 to 4 hours, turning frequently.

In a small bowl, mix together softened butter, garlic salt, 1 tablespoon lime juice, 2 teaspoons habanero pepper, and 2 teaspoons lime zest. Cover, and refrigerate.

Preheat grill for medium heat.

Lightly oil grill grate, and place salmon on the grill. Cook salmon for 5 to 8 minutes per side, or until the fish can be easily flaked with a fork. Transfer to a serving dish, top with habanero butter.

Grilled Walleye with Horseradish Sauce

2 pounds walleye fillets
1 cup Lawry's Herb & Garlic with Lemon Juice Marinade
1 teaspoon Lawry's Seasoned Salt
1 teaspoon Lawry's Lemon Pepper
1/4 cup butter
2 tablespoons horseradish
2 teaspoons fresh dill, minced

In a resealable plastic bag or container, place the fish fillets and Lawry's Herb & Garlic with Lemon Juice Marinade. Marinade in refrigerator for 30 minutes. Remove fish from marinade and drain; sprinkle with Lawry's Seasoned Salt and Lemon Pepper, to taste. Spray grill with non-stick cooking spray; cook on hot barbecue grill or in hot broiler 3 to 5 minutes per side, or until fish flakes. In a small saucepan, melt butter. Remove from heat, stirring in horseradish. Spoon mixture on fillets; sprinkle with dill.


BBQ'd Salmon

4 Salmon steaks,3/4 to 1 inch thick
4 tablespoons lemon juice
3 tablespoons soy sauce
Salt and Black Pepper- a pinch or two
1/2 cup KC Masterpiece Original Barbeque Sauce


Rinse salmon. Pat it dry with paper towels.Combine lemon juice and soy sauce in a shallow glass dish.Add salmon:let stand at cool room temperature no more than 15 minutes to 20 minutes,turning salmon several times.Remove salmon from marinade and discard the marinade.Season slightly with salt and pepper.

Lightly oil hot cooking grid to prevent sticking.Grill salmon on covered grill over medium coals 10 - 14 minutes.Halfway through cooking time,brush salmon with BBQ sauce,then turn and continue grilling until fish flakes easily when tested with a fork.Remove fish from grill.

I enjoy fish many ways- walleye is good fried, baked, breaded and fried, etc. Salmon is good fried in olive oil basil and fresh garlic (not powder). Steelhead is great other ways, but good baked.

But my latest fun way to cook fish is:

Powder/dredge fileted fish in Bisquick (dry)

Make a batter with Bisquick- not runny as "normal", but sortof thick. Start with a cup of Bisquick, a big egg, and add beer and mix with fork until not clumpy, but not runny either. Dip 'floured' fish in batter completely covering, and gently place in a deep cast iron frying pan with an inch and a half of 375 degree corn oil. Cook until the top side starts to look a little like it is starting to cook, and the bottom has turned golden to brown- then turn. Cook a few more minutes until second side is browned.

Remove, drain oil from fish and place on paper towel or rack to drip free of remaining oil and start cooking your next pieces.

Makes a really nice, bready, tasty main course.

Salmon or Steelhead filets BBQ
Ready the briquettes and then move them to both sides of the BBQ leaving a channel in the center.

Make a square pan out of tin foil
Poor a light coating of olive oil on the bottom
Sprinkle the fillet with the following: sea salt, pepper, oregano, thyme, garlic and dill weed, dont spare the pepper. Flip over and do the same seasonings on this side. Now poor some oil on this side.

Set over channel on the Q and add some mesquite or hickory chips to the coals. Cover for about 8 to 15 minutes, depending on the size of the filet. No need to flip the filet, it will cook through on one side. Just dont put it over direct heat.

Sause: mix one cube of butter, tea of garlic salt, tea of dill and some pre carmelized fine chopped onions. Poor over portions as served.

This sause works good on any fish that I have eaten also.

Broiled Trout Spread

1 cup flaked cooked trout
1 cup shredded Monterey Jack Cheese
1/3 cup finely chopped celery
1/4 cup dairy sour cream
2 tablespoons finely chopped onion
1/8 teaspoon pepper
30 Melba toast rounds

In a small bowl,mix fish,cheese,celery,sour cream,onion and pepper.Mound about 1 1/2 teaspoons of mixture on each cracker.Place the crackers on a baking sheet.

Set oven to broil at 550 degrees.Broil 6 inches from heat until the cheese melts,2 1/2 to 3 1/2 minutes.

Damn you guys are making me hungry. I like anything with the jalapeno or habanero to kick it up a notch.

Tried this stuff on shrimp once in Texas and ended up buying a case of it. It's Louisiana Fish Fry Bbq shrimp sauce mix. Ended up eating a couple of pounds of shrimp by myself :)

In a saucepan, melt 4 sticks butter or margarine. Add 1 cup water and BBQ Shrimp Sauce Mix. Simmer 5 minutes.
Divide 5 lbs unpeeled shrimp among 2/3 baking dishes with shrimp not more than 2 layers deep.
Pour sauce, proportionally, over shrimp. Bake at 375 for 20 minutes, turning shrimp several times.
Serve with French bread for dipping
For added flavor layer lemon and/or onion slices over shrimp before baking.
Enjoy!

Crab Meat Stuffed Jalapenos (Texas Popcorn)

1 lb flaked crab meat (2 cans) 1/4 tsp salt
1 lb jalapeno peppers
1/4 tsp black pepper
2 tbsp ea, finely chopped 1/8 cayenne pepper(optional)
green bell pepper, onion, and dill pickle 1 clove minced garlic
1/4 cup cracker meal (bread crumbs)
1/4 cup milk
1 beaten egg (breading mixture)

Cut jalapenos in half lengthwise. Discard pulp and seeds and rinse carefully. In a large mixing bowl, combine remaining ingredients except breading mixture. Stuff pepper halves with crab mixture and press stuffing around pepper. Set peppers aside. To prepare Breading mixture, place 2 cups craker meal (bread crumbs) in a flat pan. In a separate pan, mix 1 cup milk, 2 eggs and 1/4 tsp each salt and pepper. Dip peppers in mixture, then in cracker meal (bread crumbs). Repeat procedure. Deep fry at 365 degrees until golden brown. Drain on paper towel. Makes 30 Hors D' Oeuvres . Serve with a quesso or ranch dressing.

Panfish Chowder


1/4 to 1/2 pound bacon,chopped
3 to 4 green onions,including tops
1 large leek,chopped
1 onion,chopped
1 carrot,sliced
3 stalks celery,chopped
2 cloves garlic,minced
3 potatoes(medium to large),diced
3 turnips(medium to large),diced
1 1/2 to 2 pounds bite-sized crappie,or bluegill
2 large cans evaporated milk

This recipe is quick and easy to make. Brown
bacon,leek,onion,carrot,celery,and garlic. Add turnips and
potatoes. Cover and steam mixture. Put in Crockpot, add crappie
and evaporated milk. Cover and cook on low until potatoes and
turnips are tender. Stir and eat. Total time depends on how long
you steam the potatoes and turnips. Usual time is about three to
four hours. You also can leave the vegetables raw and let them
cook all day. If you don't like turnips,substitute potatoes. However,
the turnips add a zesty flavor. To make the night before,add all
ingredients except the crappie and store in the refrigerator. The
next morning add the crappie,bluegill and cook in a Crockpot on low.

Walleye Almondine

Walleye Filets 1 per person
Melted Butter
Chopped Garlic
Dill ( Optional)
Salt and Pepper to taste
Sliced or Slivered Almonds

On a cookie sheet or Broiler pan lay filets flat
Drizzle with melted Butter
sprinkle with Garlic
Salt and Pepper to taste.
Cook under a broiler till the fish starts to get milky then cover with almonds. Finish so the fish is opaque al the way through.
Serve with Wild Rice Pilaf and Asparagus tips
Garnish with Lemon Wedge

This will also work well with Perch, Or Crappie allow 4 filets per person.

Crappie Fritters

1/2 cup white wine
1/2 cup water
1 pound crappie
1 cup crushed soda crackers
1/4 cup thinly sliced green onions
1/4 cup unseasoned dry bread crumbs
2 eggs,beaten
2 tablespoons finely chopped onion
2 tablespoons tarter sauce
1 tablespoon snipped fresh parsley
1/2 teaspoon salt 1/4 teaspoon pepper
7-10 drops red pepper sauce
vegetable oil


In a skillet,heat wine and water over medium heat until boiling,then add fillets.Cover and reduce heat to low.Simmer for five to seven minutes or until fish is firm and just begins to flake.Drain and discard liquid from fish.In deep fryer or frying pan,heat oil.In large mixing bowl,combine all ingredients,except cracker crumbs.Add fish and mix well.Form fish mixture into 1/2 inch balls.Roll crappie balls in cracker crumbs to coat,then fry two to three minutes or until golden brown.

Thanks for sharing CM...I needed to get some Crappie recipes since we now have two local lakes that hold solid Black Crappie populations and figured out how to catch them too:D

Can't wait to test out the panfish chowder too!

Blackened Crappie Soft Tacos

Serves 2 (About 5-6 tacos)

1/4 cup chopped cilantro
2 cups bagged salad (lettuce with red cabbage and carrots)
1/4 cup salsa
3 tblspn salsa
1/3 cup sour cream
1 lb dry crappie fillets (or another type of white flesh fish)
Blackening seasoning
1/4 stick of unsalted butter
6" soft flour tortillas
Lime juice (optional)
Shredded Mexican blend cheese (optional)

In a medium bowl, mix the cilantro, salad and 1/4 cup salsa. Set aside.

In a small bowl, mix sour cream and 3 tblspn of salsa. Set aside.

Blacken the crappie fillets as directed on seasoning. (Simply: Coat with melted butter, sprinkle on seasoning, throw in a red hot iron skillet until cooked). Break fillets into bite size pieces. Drizzle with lime juice if you like.

Warm up your soft tortillas.

Spread a tablespoon of the sour cream/salsa mixture on the tortilla. Place a nice portion of fish on the tortilla. Add some of the lettuce/salsa mixture. Sprinkle with cheese if you like

Crappie Sliders

2 lbs. Chopped crappie meat
3 Tblsp. Flour
3 Tblsp. Bread crumbs
Salt and Pepper to taste
1 Egg
1/2 cup chopped Chives
1/2 cup chopped Cilantro
Juice from 1/2 a Lime
1/2 to 1 cup of pre-saut?ed and cooled onions
1 tsp. grated Ginger

In a large mixing bowl combine the crappie meat, flour, bread crumbs, salt, pepper and egg. Mix well together. Add chives, cilantro, lime, onions and ginger. Form mixture into 2 to 3-inch patties and pan fry in a lightly oiled pan to a golden brown. Assemble on a Slider Bun and dress with a cilantro mayo (mayo, cilantro, hot sauce, lemon juice and zest). Serve with a fresh garden salad and avocado slices. For a heartier meal make into full burger patties and serve on grilled hamburger buns, lettuce and tomato.
