Engine Break-In

I have a 1995 MasterCraft Prostar 190 with the 350 chevy indimar.
I just bought it and it has a fresh engine rebuild with only 5 hours on it. The guy that owned it before unfortunetly put the 5 hours on it pulling a tube and at some times wide-open Well I'm changing the oil right now, what should I use for a break-in oil? How long 'til I can use it to pull skiers?

Drop it in and go. If it has been running for 5 hours, the rings have likely set by now. Use SAE 30 oil of your choice.
