Electrical Restoration

Greetings Friends, I hope all is well.
I am wanting to restore a 27 year old bass boat and need some recommendations. I have a bunch of wires that seem to dead-end to no where and others that have been spliced several times in its past history. I plan on replacing all of the wiring, switches, fuse panels, gauges and plug-ins. Now for the question; Will I be okay gutting all the wiring with-out cause or concern to where they go? And, is there a book that I can purchase that will help me identify how and the best way to re-wire my boat? Many thanks!

(I plan on laying string or twine through the many tunnels to help with the running of new wires. I learned this lesson the hard way many years ago restoring an old car)
