Eggplant anyone?

A co-worker brought in a couple nice-looking eggplants from her garden, and I hate to see these veggies go to waste.

Anybody have any recipes for eggplant? How do you prepare it?

My wife makes Eggplant Parmesan. It involves breadcrumbs, cheese, marinara sauce, etc. and I think she fries it. Very tender and tasty. I don't know the particulars of cooking it, but, you should be able to find something online.

My mom used to prepare a deadly dish with those ratzakratza things.

I have since had them battered and fried (thin cuts) with parmesan and marinara and those weren't that bad. I was a guest and couldn't refuse them :(

Mmmmmmm...Eggplant parmesean:

Peel skin and slice about 3/8" to 1/2" thick. Lightly salt and set in a colander and let set until they start to exude liquid.

Pepare breadcrumbs seasoned with italian seasonings. Dust the eggplant with flour, run thru an egg wash, and then breadcrumbs. Set them in refrigerator for about 30 minutes while you warm up some marinara sauce.

Fry the eggplant in olive oil until golden and plate with marinara sauce on top and some hot garlic bread and a nice bottle of chianti!! Life is good!

This is good served over this < 1-cup brown rice
2 1/2 cups bouillon
Bring the bouillon to a boil, stir in the brown rice and return to boiling. Reduce the heat, cover the pot and simmer for 40 minutes or until the rice is tender and the liquid is absorbed. Don't overcook brown rice; it tastes best when the grains are still separate and slightly firm.>You can cut the rice on half and add wheat berries in its place if you want to, which is what I prefer.



Gabe's Famous Bean-Eggplant-Tomato Casserole - Quick Version

2 onions, chopped
4 cloves garlic, minced
2 green peppers, chopped
2 28-oz. cans plum tomatoes, chopped
2 T. fresh oregano or 2 t. dried
1 T. fresh thyme or 1 t. dried
2 bay leaves
1/4 t. cayenne, or to taste
2 eggplants (select very young, firm, shiny ones)
3 cans kidney beans, undrained

Bring the onions, garlic, pepper, tomatoes with their juice, and the seasonings to a boil and simmer while dicing the eggplant. Add eggplant to the pot and simmer 10 minutes. (You can peel the eggplant if you wish; I never do.) Stir in the cooked beans and simmer for 15-20 minutes.

If you're bothered by gas when you eat beans, try this simple cure for your problem. Put the beans in a large pot and cover them with water. Bring them to a boil and take them off the heat. This breaks the capsules surrounding the beans and allows stachyose, verbascose and raffinose, the gas-causing sugars, to escape into the water. Stir a teaspoon or so of baking soda into the water (to make it more alkaline) and let the beans soak overnight. Drain the soaking water off the beans and rinse them several times. (If you eat the soaking liquid, you will cause unbelievable discomfort for yourself and those around you). Then proceed with your recipe to cook the beans.

It is the web site of Diana Mirkin ,I guess that is the wife of Dr.Gabe Mirkin .I have a recipe book that I have had for several years with most of his recipes in them, some are good, some are crap, but they are all healthy and if followed will keep you filled up while you loose Wight.

i cook it the same as fried squash, green tomatoes, as Ralphy said, but 1/4 inch thick, and served hot. i also deep fry them. great southern tradition. you can subsitiute bread crumbs, with corn meal. season the hell out of them.

I like to slice the eggplant about a quarter-inch thick, rub them with a little olive oil, then I season them with a little cayenne pepper, celery salt, ground mustard, and cracked pepper; toss them on the grill until they are good and hot throughout.... yummmmmmm!​

To get rid of the bitter taste, remove the skin, cut, slice, or dice into whatever shape you want and cover with salt water for at least an hour. Then you can bread, fry, bake, season however you want. Enjoy.

Ditto that.

I absolutely love fried squash, zuchini and green tomaters, but eggplant just doesn't seem to cut it.

Before you ask for recipes, have you ever actually eaten the stuff?:confused:
My mom makes a killer eggplant parmesean. When I say killer, I mean deadly. Yick!

Hogs fed egg plant are much better tasting and leaner than hogs raised on grits. lol

I'll give ya an Amen to that. I love fried eggplant. We recently grilled some and it was ok, but fried is best.

Sliced thin and fried like green tomaters is good. Eggplant parmesan isn't bad either but it doesn't come with meat at restaurants so I usually skip it.

The Greeks have a wonderful dish called Mousakka which is very close to a Lasagne but using the egg plant as the pasta substitute. The dish is really tasty.


Mousakka

ingredients
4 eggplants
400g can tomatoes, chopped
3 onions, sliced
2 cloves garlic, crushed
500g minced lamb
1 teaspoon chopped fresh thyme
1 tablespoon chopped fresh parsley
Topping
100g butter
100g flour
1 litre milk
1 bay leaf
4 egg yolks
3 tablespoons grated parmesan cheese

method
Slice eggplants thickly and sprinkle with salt. Leave for about one hour. This will extract any bitter juices.

Cook the onion and garlic in oil until golden brown. Add the meat and herbs to the onion. Add the chopped tomatoes and juice. Bring to the boil, season with salt and pepper. Lower heat to a simmer and cook for five minutes.

Rinse the eggplants and dry thoroughly. Heat oil in a frying pan until hot and cook the eggplants until golden brown on both sides. Drain on absorbent paper.

Place a layer of eggplant on the bottom of a casserole dish. Then a layer of meat, then another layer of eggplant, another layer of meat and, finally, a top layer of eggplant. Make sure the top is flat.

Warm milk with a bay leaf in it and set aside. Melt butter in a saucepan and stir in flour. Cook for a few minutes and take off the heat. Slowly add warm milk into the flour mixture, stirring constantly to avoid lumps. Return the mixture to the heat and stir until boiling. Season with salt and pepper and cook for five minutes. Remove the bay leaf.

Mix the egg yolks in a bowl. Pour the milk mixture into the yolks, stirring all the time. Add half the cheese. Mix well and pour the mixture over the casserole. Sprinkle the rest of the cheese on top. Bake for 40 minutes in a medium oven until the top is golden brown and the mixture reheated.

(plus the age old story of how it even got started.."Ya see that chicken over there?. I'm gonna eat the next thing that comes out of its butt"...):D

I love Eggplant Parmesan, and actually order it out sometimes. Great stuff. Mom cooked as a kid and I guess I developed a taste fer it . . .

First, wash the eggplant.
Then get out a sharp knife, cutting board, and frying pan.
Lay the eggplant to the side.
Then cook something else.....
