I'm looking at buying a Glastron GS259 or similar make and was wondering if it's possible to keep a small inflatible(Zodiac) on the swim step while underway. Does anybody do this? My thought is to inflate it, tie it up against the stern on the step, and when we get to our location (Catalina) push it over and throw a little outboard on it to putt around.

As long as you have a way to securely fasten it to the back of the boat, I sure don't see a reason why you couldn't.

I had actually thought of throwing a small kayak onto my boat for sneaking into places I couldn't with my 17ft boat for fishing, though I don't know how I would securely lash something like that onto the boat ( I'd probably be better off just buying hip waders )

You can take the Kayak on your boat with a Dinghy Sling. It will be secure and won't take up deck space. Harbormenmarine .com sells them
