Dies in idle after being throttled up

Hey guys hoping someone can lend some insight into this......To give the back story I recently replaced the long block on a 4.3L Mercruiser due to improper winterizing. New block/manifolds and gaskets..reused as much as the old components as I could, carb, alt, etc...

The engine starts and idles great, has great response when throttled up but sometimes when throttled back into neutral it will stutter and die...I can keep it going by spraying fuel back into the carb but will eventually die...now keep in mind not every single time, sometimes when throttled back the engine runs great just as it should....I have the flame arrestor off and am using the throttle on the carb to run the engine at this point, also have a remote switch hooked up to ease in starting.... I know I have the thing timed perfect as per the manual, I am leaning towards more a fuel issue..maybe even a leak in the intake or around the carb base...if I spray fuel around both gasket sections it does not make any difference in RPM. Any idea would be much appreciated!!

Serial# 0W046120.......4.3L Mercruiser Alpha w/ 2 barrell carb...Thunderbolt 5 Ignition

Thanks for the reply Bodo, I just had the carb apart and found lots of 'gunk' under the venturi. Re-ran it and it is much better!
