The threaded rod is too thin imo. it will bend easily and may not do what you want it to. A larger diameter will work well.
Instead of the rod, I would try a thick walled pvc pipe, that goes over the motor mount rods and continues into the oar ear. With this one you will need a bit longer bolts to attach the motor mount to the original motor mounts on the boat and will need to drill holes in the pvc pipe for them. I would go with the same diameter bolts, just longer, so you don't compromise the strength of the pipe by drilling large holes. At the oar ears you may not need anything to hold the pipe to the ear - the tension there won't be that strong to pull the pipe out of the ear. If it does need support there, this is easy to solve with another hole in the base of the oar ear, on the opposite site of the hole you drilled to attached the threaded rod and then some strap or wire through the holes and over the ear will hold the pipe in place.

Sorry to dissapoint you, if that sib has pleated tube's seams definitely was made with thin + 0.5 mm fabric. that means that tubes can't be inflated to a higher working pressure to achieve more rear tube rigidity so engine mount flexes less donward when giving more throttle. Works fine at slow displacement speeds, worst at full throttle.

Some time back tested a 3.0 mt 1.2 mm pvc fabric sib inflated to 4.0 psi. Althought the tubes felt very hard at touch, when giving 3/4 to full throttle, mount and engine flexed downward and that sib had a solid metal pipe attached to engine mount. So fast displacement speed was the way to go in order to have fun. Flexing is the spirit of those first entry inflatables, not much can be done, just enjoy your set up.-
