Correct engine mounting height

Advise on proper transom height for outboard engine. 115hp Yamaha is mounted too low on the transom of a '92 19'Sunchaser deck boat - water hits bottom of cowling while on plane. Boat previously was heavily loaded on front end. With weight removed, the engine seems too low in the water.

The usual method is to raise it one notch at a time until it starts ventilating on turns and then drop it back to the last notch for it's permanent position. This should have the cavitation plate very nearly level with the keel of the boat.
