can anyone recomend a good fish cook book? preferably camp type cooking but open to all suggestions. thanks a million.

I can't recommend a book but I can give you an easy recipe. <br /> BLACKENED FISH FILLETS<br /> Heat a large cast iron pan for about 10 minuets. (outdoors) <br /> dip fillets in melted butter and shake on a good amount of blackening or Cajun seasoning (I prefer Cajun).<br /> When the bottom of the pan starts to turn white gently place fish in pan. LOTS of smoke at this point. Watch fish and when it turns light about half way up turn the fish(do not try to move the fish up to this point) and finish cooking on other side. Sometimes I move the pan to lower heat after turning if the fillets are thick. You should end up with a nice moist fillet with a spicy brown crust. At home I do this with my single burner Coleman camp stove out on the deck.

I agree with OMC on th blackening. I use Paul Prudone's Redfish Blackening seasoning prepared the same way OMC does. It's good on any fish.<br /><br />If you do a search there are all kinds of fish recipes in the archives here. :)

jeromeo - what kind of items do you usually bring camping for cooking .. <br /><br />or should I ask .. what kind of camping do you do? roughing it? or park side?

Here is a good one for catfish. Put some mustard in a bowl and add some Cajun Creole seasoning to the mustard. Dip the fish in the seasoned mustard and then into cornmeal and fry. Good stuff.

Take two musky fillets, Soak in Lye till christmas and serve the best lutafisk you have ever had.

thanks for the ideas ill try them soon. ladyfish- where do you get paul prudones redfish blackening seasoning? our camping is from a pop up trailer,for cooking we have a small stove,propane bbq and the good ol fire pit.thanks everyone.

I usually find mine at Kroger's Grocery Store. Check the spice isle for it. It'll come in a skinny tall white box, the bottles inside. He makes a variety of blackening seasonings. The Redfish seasoning is great on all fish. Follow the directions and voila, easy and good eatin.<br /><br />BTW, a cast iron skillet is a must. And since it'll smoke ya outta a decent sized house, you will want to do this outdoors. :)
