Salmon and Corn Chowder<br /><br /> * 1 pound salmon (cut into bite size pieces)<br /> * 3 tablespoons butter<br /> * 2 medium-sized green onions, including tender green portion, cut into very thin slices<br /> * 1 cup whole kernel corn<br /> * 1 large potato, peeled and diced<br /> * 2 cups fish stock or bottled clam juice<br /> * 3 cups milk<br /> * 3 cups heavy (whipping) cream<br /> * salt to taste <br /><br />Melt the butter in a large saucepan over low heat. Add the onions and cook, stirring frequently, until very soft but not browned, about 8 minutes. Add the potatoes to the green onions and stir to coat with the butter. Pour the stock and simmer uncoverd over low heat for 15 minutes. Add the milk and cream and simmer for 10 minutes more. Add the salmon and corn and simmer just until the fish and corn are done, about 5 minutes. Season to taste with salt and pepper. Serve immediately.

The Cliff House Clam Chowder <br />from The Cliff House in Ogunquit, Maine<br /><br />The Cliff House Clam Chowder has been on the menu since 1872.<br /><br />1 slice hickory-smoked bacon, minced<br />1/2 teaspoon butter<br />1 cup onion, minced<br />1 medium garlic clove, minced<br />1 teaspoon The Cliff House Spice Blend <br />[Blend 4 tsps oregano, 4 tsps dried parsley, 2 tsps marjoram, 2 tsps dill, 4 tsps thyme, 4 tsps basil, 1 tsp sage, 4 tsps rosemary, 2 tsps tarragon, 1 tablespoon all-purpose flour, crushing in a mortar if possible. Store in a resealable plastic bag to refrigerate.]<br />1 tablespoon all-purpose flour<br />1 can clams (6-1/2 ounces)<br />1 cup bottled clam juice<br />1-1/2 cups Half and Half<br />1/4 teaspoon white pepper<br />2 medium potatoes, boiled, peeled and diced <br /><br />In a heavy-bottomed, 4-pint soup kettle, sauté bacon, butter, onion, garlic and The Cliff House Spice Blend over low heat. Do not allow to brown. Drain clams and set aside, reserving the juice. Slowly stir the flour and clam juices in the sauté mixture. Bring to a boil; reduce heat. Add Half and Half and simmer 20 minutes. Add white pepper, potatoes and clams. Heat to serving temperature. Do not allow to boil, as this toughens the clams. Serve at once with crackers and warm cornbread. Serves 6.

I se guys throwing away the frames after fileting their catch-and they're doing themselves out of some fire eating.I just drop the frame into a pressure cooker, let it cook for about 10 minutes, then lift out the frame onto a plate and scrape the meat off the bones and put it into a heavy cast iron pot[ which I already had on, sauteing a whole copped onion]along with the fish stock.To that I add chopped celery,potatoes and mushrooms.Let that simmer away until the spuds are done, then I add a mixture of a can of mushroom soup, a cup of milk powder,a small amount of water and some flour to thicken it. That goes in and lastly I add chopped green onion .Salt and pepper to taste, garlic too.Simmer the whole pot, serve with garlic toast.<br /> Bestof all- it doesn't cost much to make, is tasty and nutricious.Cream would taste better, but I opt for the low fat powdered milk and mushroom soup option.Probably better for you, too.The thing is, there's really no recipe- you can vary it anyway you want.I've made it with tomatoes instead of mushroom soup and milk- just another option

Can you say "Mouthwatering"? :D <br />Now I'm gonna have to either learn to cook or find me a wife that already is. :D <br />I'm also gonna have to search on this and find the rest of those recipes that have been posted here so that I'll have them for future use. :D

ratherbefishin, that sounds really great. Ya gotta love a man who can cook. Ratl..you'd better learn how to cook. ;) <br /><br />Seadog, I agree chowder is just one of those comfort foods. :)

LadyFish-yea,I reckon I'd better-I can cook a little but just basic stuff-and usually on weekends,to tired after work during the week. :)

This is an old post I started a couple of years ago. I was hoping for more recipes.<br /><br />With a nip in the air here today, I' getting ready to make some New England Clam/Corn chowder.<br /><br />Does anyone have any other chowder recipes they would like to share?<br /><br />Gotta love chowder! :)

Those sound great,ill have to try them,this day and age its hard to find a woman that can cook,thats why i end up doing all the cooking,started when i lived alone you either cook or starve.

After seeing this, just had to go and heat up some canned clam chowder.Ya I know it's canned, but tasty non the less!

I don't want to take anything away from chowders, as all chowders are hearty and great on cold nights, but for a change and to help keep the cold bug away, a little chicken soup (Jewish Penicillan) can hit the same spot. Especially, home made chicken soup. :D ;)

Well white is white and red isn't8) Manhatten style has tomato and New England doesn't.

New England chowder is white and cream based. Manhattan chowder is red and tomato sauce based

my favorite chowder recipe:
1 can of Snow's clam chowder
1 can opener
1 spoon
1saucepan
1bowl.
Open can with can opener. Heat contents in sauce pan and stir with the spoon. When hot. serve in the bowl.
