Drop the lower unit, disassemble the pump, install the new one and replace the lower unit. Oh yes -- do it with the guidance of a service manual.

I recommend getting the OMC manual for your motor. Ordering the complete water pump kit with the housing. http://www.marineengine.com or iboats.com has the kits, there are other places too. The OMC manual has step by step instructions with pictures. There are several posts on this forum regarding impeller changes. I would read a few of them to see tips and tricks people have come across.

I did my first one a few weeks ago. It wasn't that bad at all. I made a fixture out of plywood and cinder blocks to hold the lower unit after I took it off. It took a little over 2 hours to complete. That included taking pictures along the way.
