I have a pair of Eagle Cuda 168 sounders. One in the boat at the transom and the other on the trolling motor. Both run simultaneously when fishing with the TM submerged.
I usually fish in 20' or less of water. I may get some cross talk but not such that I notice it.
In deeper water, the cones could overlap (more or less depending on aperture width....7 degree, 20 degree) and one might get some "fish" that weren't really there I'd suppose. I really doubt that the depth part of the signal would be affected.
I'm not familiar with the TX/RX sections of these things nor their signal capture process so I can't give you any technical response as to yes or no. About all I know is that they operate at 200kHz and they work on sound waves, not electromagnetic waves like your radio or TV.
