Bought a Garmin Dash Cam 20 that is GPS enabled and films in either 720P or 1080P. I have found that the video quality is pretty darn good.
Based on the short time I have had this unit I can heartily recommend it.

All the video is time stamped along with the date. It records in slightly less than 4 minute segments. Makes it easier to go back to a certain time to pull up a video you want to watch. As soon as I figure how to post an actual video here you will see how date and time is part of the video presentation. It is also GPS enabled and draws its time from the same source your marine GPS or portable auto GPS does. It is pretty much slam dunk if you were to go to court and contest a ticket. A friend of mine got a ticket for running a red light. He said nothing and accepted the ticket from the officer. He got his court date. When it came time for him to testify he connected the same unit I bought to his laptop and played it for the judge. His case was dismissed and the judge chewed out the officer telling him to make sure the next time he writes up someone for running a red light to make sure they actually ran the light so as not to waste his time.
Here are a couple of examples of the camera capabilities. It also has a microphone to record sound so turn your sound on as long as you don't object to 60's music.

A nighttime video. Near the end I have to hit the brakes to avoid running over a raccoon that decided to cross the road in front of me.
As to the data such as time, lat/lon, speed etc check the lower left of the video. All you need to verify date/time is there.
