Can you support the rear of the boat on the keel of the transom to lift the entire stern to reposition bunks?

my boat is aluminium and is about 1800 lbs

you can, however you would have a hell of a time balancing it to keep it from falling off the jack. you may do one side at a time

use the stern eyes and hang it

Another option maybe, would be to drop the front of the boat as low as possible, block the rear on each side of the transom, and finally, raise the front of the boat back up.

I just launch mine and tie it up at the dock at the launch and do it quick in the parking lot,..

Pick a wid-week evening when it isn't busy,..

Keels in fiberglass and aluminum boats usually are not strong enough to support the boats entire weight, at the transom.

The corners of the transom are the preferred blocking points.

The keel at the bow is the front blocking point.
