So what's your favorite or good fish recipes? I have a couple that top my list.

Bluegill: filets soaked in brine for thirty minutes to an hour, then breaded with cornmeal and deep fried. Simple but delicious and crispy.

Bass: filets placed in baking dish and covered with sautee'd onions and bacon bits, then pour enough milk in to cover the fish completely. Bake at 350 until the milk is condensed down to a ceme consistency.

MMMMMMM! Walleye.

Roll filets in Frying Magic and fry in butter. Serve with wild rice and morels.

Channel Cat filets. Roll in Frying Magic and grill in a George Foreman. Serve with collards and field peas.

I also have a homemade alternative to Frying Magic made with yellow corn meal, garlic powder, McCormick Season All seasoned salt, pepper and paprika.

Baked catfish on a bed of asparagus with some chees melted in. My wife makes this and its yummy.

Sac-au-lait (crappie) coated in yellow mustard, covered in seasoned cornmeal or fish fry and deep fried.

Flounder stuffed with crab stuffing, seasoned well, and baked in lemon and butter.

Catfish fillets sitting on a cedar plank, lightly buttered and sprinkled with seasoned pepper and spritzed with lime juice cooked slowly over mesquite.

if you don't have catfish them use Salmon.

Any fish or meat breaded with, if you can find it, Uncle Buck's, breading.
Use to be in Wal-Mart stores but have not seen it in a while.

I'll second that. I still see it in Kroger grocery stores.

Yeah I've seen it somewhere else, too, but I can't think right off where. It was either Food City, Food Lion, or IGA.

Ooh, Ingles is likely to have it if you have an Ingles near you... they seem to specialize in having everything under the sun, and half the things not under the sun. Expensive though they may be.

Grilled Salmon with Habanero-Lime Butter

INGREDIENTS

1/4 cup vegetable oil
1/2 cup orange juice
3 tablespoons lime juice
1 tablespoon tequila
1 tablespoon grated lime zest
1 tablespoon minced habanero pepper
1 clove garlic, minced
4 (5 ounce) salmon steaks
1/4 cup butter, softened
1/4 teaspoon garlic salt
1 tablespoon lime juice
2 teaspoons minced habanero pepper
2 teaspoons grated lime zest


DIRECTIONS

1. In a bowl, stir together vegetable oil, orange juice, 3 tablespoons lime juice, tequila, 1 tablespoon lime zest, 1 tablespoon habanero pepper, and garlic. Reserve a small amount to use as a basting sauce, and pour the remainder into a shallow baking dish. Place the salmon in the shallow dish, and turn to coat. Cover, and refrigerate for 2 to 4 hours, turning frequently.

2. In a small bowl, mix together softened butter, garlic salt, 1 tablespoon lime juice, 2 teaspoons habanero pepper, and 2 teaspoons lime zest. Cover, and refrigerate.

3. Preheat grill for medium heat.

4. Lightly oil grill grate, and place salmon on the grill. Cook salmon for 5 to 8 minutes per side, or until the fish can be easily flaked with a fork. Transfer to a serving dish, top with habanero butter, and serve.

Beer Batter Fish Fillets

INGREDIENTS

1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon dried dill weed
3/4 cup beer
1/2 cup milk
2 eggs
2 pounds cod fillets
2 quarts vegetable oil for frying

DIRECTIONS

1. In a large bowl, mix together flour, salt, baking powder, and dill. Add beer, milk, and eggs; mix well.

2. Place fish fillets in batter mixture, coat well, and let stand for 15 minutes.

3. Heat deep fryer to 375 degrees F (190 degrees C). Place fish in hot oil, and fry until golden brown. Cook fish in batches to maintain oil temperature. Serve. Note:
We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount may vary depending on cook time and temperature, ingredient density, and the specific type of oil used.
