Ah huh........got ya. I bet you thought you'd find the best damn Crappie receipe right here. Well hang on and you eventually just might. Come on people, tell us yours. Here's mine, and it's very simple. Roll'em in egg, then in 4-seasons (it's a mixture of cracker crumbs, bread and seasoning) you can buy at your local grocery store. I believe it's in with the spices and called 4-Seasons. Take a cast iron frying pan with about 3/4 inch cooking oil (veg or olive oil)Heat to 350, drop'em in and cook til golden brown.<br />Excellent taste.....................

Roll em in Corn Meal that has a little Tony Chacere cajun seasoning mixed in with it, then fry in peanut oil until they float. <br />Chase it down with a Lone Star.

Crappie? Best thing to do with them is toss them back in and get back to Bass or trout fishing... I know we don't have real big fish out here on the west coast... and the crappie are so small we just throw them back in... mabe 8 inches from mouth to tail and 4-5 inches accross.. or high... Only kept one in my life! That was a few weeks ago when we some grandkids come for a visit and one of them caught one.. turned out to be the first fish he had ever caught and wouldn't let grandpa throw it back in! :) (not that I tried) But I did send it down to his mom to clean and cook :D <br /><br />Link<br />Oh I will give them little things credit... even being so small they do hit hard and fight like crazy !!

this is the best, read no further<br /><br />rinse fillets<br /><br />dredge in yellow corn meal .. let dry out a bit<br /><br />dip em in egg then italian bread crumbs<br /><br />fry in 2 inches of 350 oil (preferably peanut) - when brown, they are done<br /><br />If you like a crunchier texture, mix yellow corn meal with the bread crumbs at 50 - 50<br /><br />but italian bread crumbs have a fantastic texture that doesnt fall off in slabs like corn meal, and the inner layer of yellow corn meal provides that great corn flavor, damnn I want my boat running now, I WANT FRIED FISH!!!<br /><br />and mickey D fillet O Fish aint gonna cut it!

Just a hint which you all probably know anyway. If frying whole (not fillets) be sure to leave the tail on. Sprinkle a little salt on it just out of the frier and crunch down. I always make it my first bite!<br />Bob

Ah..you all are missing out on the real best recipe..Try this as Crappie have very fleshy fillets.

First..soak in butter milk over night..this will firm the meat with texture like red fish
Then roll in your favorite meal and fry till golden brown..I learned this from a man in upstate New York...5 star my friends,

Chuck, I will try the soak in butter milk sounds like it would make fish taste great. I can never get the coating as crunchy as I like it maybe this will help what type of oil do you use when frying.....

Roll in Frying Magic and stick in the Geo Foreman grill. Fat from frying interferes with the delicate flavor.

The best oil for keeping hot without scorching is peanut oil..

We dredge with CORN flour and yellow cornmeal..salt and pepper..The buttermilk will really surprize ya..Fish fillets will be 5 STAR { -:

Chuck, Thanks will give it a go do not have any crappie now but boat is almost ready to go back on the trailer (replacing bunk boards) when back on will get a few stripers and give it a try and let you know how it turns out Thanks for the tip....

Hey Chuck that is a nice size crappie you got there and those fillets look excellent. I was out working on the trailer so hopefully I can get the boat out next week sometime.:)
