I've done it with a variety of camper/boat combinations. The main problem is ensuring your weight distribution (center of gravity) for each trailer is well ahead of the axles. Since you're planning to use a 5th wheel, this shouldn't be a problem. I've tried it with a bumper pull, but it needed additional sway controllers between trailers to ensure stability on the road. The first one had no trailer brakes, but the truck was OK to stop it all. The last two have brakes on everything. You'll need to adjust the brake controller when you have both in tow. I found mine needed a higher setting to ensure the surge brakes were activated on stops.
