anchoring problems

I have a windlass in my boat. I am new at boating but it seems that it is malfunctioning...or maybe it's just me. When I release the anchor, the anchor drops normally until i guess it hits the bottom and it kicks the rope back and the releases from the track. I tightened the "gypsie?" (that triangular thing) but that hasn't helped. Am I doing something wrong? Should I be releasing the anchor as I am backing up to keep tension on the line or should I release it, wait until it hits bottom and then back up so that it digs in and creates more tension? Any suggestions would be greatly appreciated.

I cant picture everything your saying BUT you have to reverse and drag the anchor to set it

And then let out enough scope for the depth of water 7 to 1 for example or more if conditions are bad

in 15' of water you would need 100 feet of line if your staying for any length of time

Of course if you are just stopping for lunch you could use much less if your not leaving the boat
