When accelerating, it stalls for 3-4 minutes and then kicks straight into full throttle. There is no medium speed.........Any suggestions?

When where the carbs last rebuilt?

Could try to open the lows 1/4 turn but medium is set by the pop-off pressure. If memory serves it should be 35-55psi. I set my 717 motor at 40ish, 1.5 seat with 90g spring.

Souods liek you have a major air leak/ lean condition.
Usually when you get uncontrolled revving like that ( that is if the carb throttle plates are closed basically you are not squeezing the throttle wide open) you either have a big air leak somewhere after the carbs. Either at the manifold either at the carbs or at the rotary valve or you have a crank case seal or the cases are no longer sealed. Thats also probably why you have a long cranking condition.

I am still trying to understand your description of the problem, when you start it out of the water does it run wide open even with the throttles closed and the ignition turned off?

I think she means sec not min. Goes WOT ski falls on face then takes off. I doubt when accelerating she holds the throttle for 2-3 min.

if what you are describing is a few second lag when accelerating hard try adding a half turn to the low speed jets but usually it means you need new diaphragms in the carbs, they are not responding as fast as they should, could be getting less flexible or some other issue, if there was a vacuum leak the ski would diesel when it is running out of the water on the trailer.

clean your carburator out, make sure you pay special attention to the high speed needle. Good luck.
