Are you sure it has 8.1's? That engine didn't come out until 2001.
Anyway, no matter what engines it has, have someone do an engine survey. That should include (at least) oil analysis, compression test, scan engine operating history and fault history, and visual inspection.
The last time I did an engine survey on a similar boat (2003 Searay with 8.1's) the biggest thing I found was that the exhaust manifolds needed to be replaced. They were the original aluminum manifolds and had corrosion/cracking where the bronze elbows thread into the bottom. Be sure to take a look at those.
