1999 Johnson 115 preventative maintenance

I just bought a used boat from a little old lady. Boat is in mint condition and it has a 1999 Johnson 115 J115PLEEM that runs nice enough but I believe needs a new water pump because the temp gauge is jumping up and down... temp pegs at about 180 which I believe is slightly hot.

My question is, should I also do some other preventative maintenance on this engine while I have it in the shop? I do not think any other parts have ever been replaced so is there a part or parts that I could replace now?

Change the gear oil, inspect the gearcase seal under the prop for fishing line. Grease the motor zercs, clean the main strainer, under the airbox. Replace any external filter elements

Check the built in fuel tank for old. stale fuel and replace with fresh fuel. Test the OMS oil injection pump system. Replace the water pump with a whole kit. Inspect/test the thermostats.
