Thoughts/opinions on 1994 175 Mercurys?
Considering the purchase of a Grady White Sailfish with twins.
I'm sure their not too fuel efficient.....but are they reliable? Easy to work on?

I suspect the opposite is true.

Saltwater motors don’t make it 25 years unless they sat for long periods at a time.

I would pass given the age of the motors and sitting unless the price they are asking makes sense with the cost of a repower figured in.

How about an opinion on the engines? Are they problem prone? Easy to maintain and work on?

They should be 60* V6 motors. They should have 3, 2 barrel carbs each. They are a proven design and very reliable. Parts are easy to get.

However, their age and high use of fuel tend to make their sale value very low. So they should be very cheap. In other words, you should be buying the boat, and the motors are nearly free. IMO
