1993 Fourwinns OMC 5.0L Slight Overheat Issue

I have a 93' Fourwinns 190 Horizon with the 5.0L H.O. engine 325 hours.

After four years of abuse and running perfect I had a riser gasket failure that later led to a bad overheat and water lock. After a complete top end rebuild new head, intake, riser gaskets, new plugs, fluids, filters ect., it runs about the same as it used to. 5 hours on rebuild then winterized.

This year the impeller burned up after a few minutes on the muffs. No major chucks lost just a fine powder. I no longer had a garage (thank you economy) so I took it took a local shop. They replaced the impeller and a leaky freeze plug and said cooling system was good to go.

My question is what is a normal running temp? I am seeing 150 off idle and about 170-180 WOT. While pulling a large tube with 300lbs of alchoholics I was hammering the throttle wide open over and over. Upon the third pull the engine almost redlined to 230, we stopped. Revving the engine in neutral to 1500rpm brought the temp back to normal (160) in 10 minutes. Ran fine the rest of the day. Engine seams to have decent power (for a ford) I can go 40-45 on a 21 pitch prop.

Is this normal or an impending problem?!?! I have back flushed the power steering heat exchange with a garden hose, no change, no debris.
