The long block is about 575 lbs. When you add on all the accessories, manfolds, etc. You looking at around 700 lbs max I would think. Here are some pictures of my gantry and my 5.7 with exhaust housing and stuff hanging from it. The gantry didnt stress at all.

The posts are 10' 4 x 4 and the "I" beam is two 10' 2 x 8's lag screwed together and then sandwiched on the ends by 2 x 4's with all thread. All the lumber and hardware was about $100 and the chain hoist is a 1 ton I got off Ebay for $30 shipped. I screwed some casters on one end of each side so I could tilt it on its side and roll it around.

Nice! exactly what I had in mind, how tall is the beam off the ground and how tall is the rear of your boat off the ground?

The bottom of the beam is 10 feet off the ground. I believe the highest point of the rear of the boat with the engine dog house down is about 53 or 58 inches. I cant remember exactly. I had to pull the motor, back the boat up so I could close the dog house, then hoist the engine up a little more to fully pull the boat out and clear the engine. The gantry is plenty high for my setup and the chain hoist has 7 feet of chain to get it down to ground level and on to my engine stand.
