1983 75 hp Evinrude issue on a Starcraft Mariner

I just picked up a real nice 1983 Starcraft center console with 1983 75 hp Evinrude. I bought it knowing it had an issue with struggling to make the power to get the boat on plane. It starts and idles fine and doesn’t/didn’t give any indication of an issue until throttling up to take off.

What the previous owner has found and fixed at this point:
He found that the internals of the voltage rectifier had melted out and some of the wires at the power strip on the side of the motor showed signs of getting hot at one point. He replaced the rectifier and put heat shrink tubing over the ends of the wired where the insulation had melted some. He also replaced the power pack. He checked the coils with a multimeter and they checked within specs. He splashed boat and the issue still occurred. He pulled the plugs and it appeared the center cylinder wasn’t getting fuel and that’s as far as he ever got before selling it to me.

So I’m thinking the carburetors need gone through but I’m perplexed at the fried rectifier issue. I’m pretty good at working on engines but I’m a total noob when it comes to boat motors and there’s no marine repair facility around me that will even touch my boat because of the age. I’m just curious-and hoping someone on here may have encountered and solved this type of issue and could maybe offer me some helpful advice. It would be greatly appreciated!

In the meantime, I’m going to go ahead and order 3 carb rebuild kits, go through them, clean out the tanks and lines, replace impellers, and drain and refill the lower units and see where that gets me.
