I am assisting my dad with fixing his 1973 65 hp Johnson. The engine got hot causing it to take out a piston and rod bearing. While working on it we came across a couple sensors. One has 2 wires and the other just one wire. I looked them up on the parts breakdown, and they are called thermo switches. My question is; first off, what is their function, and can they be tested to determine if they are working correctly? He can't find any information on these in his rebuild manual. Any help would be appreciated.

The one on the top, starboard side of the motor is for the hot horn. The one on the bottom, port side is for the automatic choke. It should be disconnected in accordance with the following service bulletin.

Thanks for the information, but one question. In the service bulletin, it does not mention the 65hp model. Do you know if this still pertains?

Yes, it does. Also, don't forget to jump the terminals that are mentioned in the bulletin. If you don't, you will only get half actuation of the electric choke, when you use the switch at the remote control.
