1960 5.5 hp evinrude hard to start when hot

I have a very nice clean 5.5 evinrude. I decided to get it going after a number of years being idle. My notes tell me that it has new plugs, coils and impeller installed about 10 years ago but then never used the motor. Checked the spark..ok. Rebuilt carb and ran in tank ok. Put on boat and started fine and runs good but if going real slow and it stalls or if you want to shut it down and restart it very difficult.. after I put the carb on I noticed that I should have put two carb gaskets on in order to protect the carb from heat..I have not gone back and installed the 2nd gasket..could this be the problem with hard starting a warm engine..thanks

Two gaskets?? Wonder where that info came from. It only gets one. Besides, the intake manifold doesn't get very warm at all. At least it better not. That hard start when warm thing usually points to bad coils. Time to revisit those. Never mind that it has spark. That doesn't impress me at all.

Compression test ?-----The original head gaskets were not the best and replacement is a better gasket.

Two gaskets came in the Serra instruction package- thought it strange also. Compression 55/60 lbs -
Testing spark with a little gadget made from a plug and alligator clip..think it has new, at least unused coils...is there a way to positively test them??thanks for your help

Checking for spark like you are doing is probably the best way (look at coils -- replace if casings are cracked, whether or not you currently have spark). Kits often contain extra parts (different models).
