How to disconnect temperature sensor?

Can I get some help on how to disconnect the temperature sensor wires? Do you just pull it apart, or have to bend or twist it or something?

A few drips of rubbing alcohol on the rubber and it will slide back like magic. Then unclip the mating metals.

The last knife connector I saw was on my Fat-Fifty and early 60's Big Twin. How long did they use those?
