prop size and low idle setting.....

I have a 14' Jon boat with a 30 hp tiller steer evinrude ob on it. We took it to the lake yesterday after a carb rebuild and it ran like a champ full throttle, but no so great at idle. Any suggestions? I think it is the low speed jet adjustment. Also, it does not get up on plane very well with the current prop. To me it acted like the time we lost our port engine on our other boat and tried to come in on one. It would over rev and not really push. The prop now is a three blade 10-1/2x11. Will sacrifice speed for planing ability and hole shot. Tops out now around 20mph. Need a prop with more bite.... What say you boat gurus?
