Pulling Carbs - anything else I should do?

I'm planning to pull the carbs off of my 1995 88 SPL 'Rude.

Should I go ahead and do anything else while I'm in there?

Any other preventive maintenance items that are fairly inexpensive?

waterpump & thermostats.

waterflow deflectors and new headgaskets.
clean heads. for even temp no hotspots.
that will keep your motor happy.

Is there any way to ensure that the head surfaces are level without pulling the block?

Any tricks to pulling the headbolts with the lowest risk of breaking one off? One side of the engine has had the head removed at one point (by someone other than me), the other side appears to have original paint and what not. The original side may have some corrosion on the bolts, and definitely needs a gasket.
