I have a 19' fiberglass center console that was a custom build that I am now rebuilding. It has a 90 hp Mercury 2 stroke that powers it. Would 2 pieces of 3/4" Marine Fir plywood be sufficient for the transom? I do plan on epoxy and glassing it all in just not sure how thick to make the core. Thanks.

Make it exactly the same as the one coming out. Poly resin is more than adequate for this repair. If you are gelcoating it won't stick to epoxy!

If that's what is in it now, it should be fine. A lot of guys add knee braces if room allows.

I agree with the above. If that's what's in it now, 1 1/2", then you'll be fine. Epoxy is the best route. It will waterproof it better than poly. You can use the thickened epoxy to glue it together, then paint it with epoxy to waterproof it, then use the thickened epoxy to glue it to the rear skin. Drill your holes (drains, motor mount, etc.) 1/2" oversize, fill with thickened epoxy, then drill to the correct size, and those are waterproofed.
