I ran the engine for an hour at 1800 RPM's for cam break in. The hose never sucked flat, engine never over heated and I made sure that the thermostat was working fine by just checking water temps with thermocouple and multimeter on the temp sending unit.

You don't have a raw water pump on your engine, so you just used your hose water pressure as the pump. A Volvo or Merc Bravo pump will suck most hoses flat at around 1800 to 2000 rpm.
