The outdrive trim should be connected directly to the battery as the trim motor has a high current draw. The starter is a high current draw item as well. Are you sure the battery connections are tight and that the battery is really good??? Shutting the engine off while in gear should not impact the trim operation in any way. I'd start with checking the battery connections and battery condition. Then move to hitting the red button circuit breaker which is usually mounted on the engine or exhaust riser. Followed, if necessary, by digging out a voltmeter.

What does the voltmeter at the helm indicate when the ignition switch is in the run position? and then what does it indicate when the outdrive trim is actuated? Does the indicated voltage drop and by how much?
