I've not, as I have a strict rule regarding entertainment technology on my boat (thus the name "Knot Connected").
I am however an IT professional, and would believe that the job should be pretty simple. There shouldn't be much back there but a standard 120v outlet and a coaxial jack or two for antenna / cable. Replacing the CRT with something more up to date should be pretty straight forward, so long as you can find something that will fit nicely. You may want to consider a LED TV with a VESA mount to make accessibility and adjusting the viewing angle convenient.
