Can someone clarify for me the operating range for the above motor.
I think 5,100-6,000 rpms.
But I wan't to be sure.

Also, why is it recommended to be in that operating range. Fuel economy, longivity?

5000 to 5500 RPM with the boat in average load conditions. There are a couple of reasons usally the max. torque is at that RPM and longivity are the most important of them

I don't completely understand why at highrer RPMs it is better for the motor.
Seems fuel consuption should go up and wear out faster,
but the opposite is true?

With a marine engine it is always under load, if driving a truck is going up a grade or down one the easiest on the running gear
