brother came to visit for his annual roundabout. SW MO to a day here, Atlanta for a week, back here for a week to home.

and for said birthday got a really ripe fresh pineapple (good but not as good as the ones we've grown). Juiced the remaining into juice to use in the mix - left the pulp in with it. super flavorful. and i crush my cherries.

not too pretty but very functional meatloaf while he was here. we revelled in the following days' sandwiches

for his last supper, two pounders bone in. dry brine for 36 hours then reverse sear to temp.

then at temp i told him to get the egg blazing hot so at 750 i told him to take them out and 'burn the s... out of them for 2-4 min per side.

15 min rest in the easy bake oven (toaster oven). We are were too hungry to remember to get fancy plated pic so here is his halfway thru.

side were joe spuds and mamma mac n cheese. oh and a baguette

the above was a dinner for the boys and their girls, me ac and brandon. plus one to send home to another person who couldn't make it. five at once and when its a party reverse sear is perfect method to enjoy the party. Also helps to have a meater

This turkey had a 24 hour bath in Boom’s Ultimate Brine (with the exception of maple syrup instead of brown sugar and a few other ingredients, like turmeric, added), then smoked for about 5 hours with apple wood. Delicious! It didn’t last long …IMG_7238.jpeg

'Twas the day before Christmas and in or house the Gumbo was cooking thanks to my spouse. Pretty good huh. Christmas eve thing for us, seafood gumbo. Don't know the whole prosses but Crab, shrimp, crawfish tails and andouille sausage. real dark rue, okra and other stuff
