U.S.S. Too Tall

Hey people, it has been a long time since I have been on here, and again, its because I have a problem.
The boat starts up great, easy. After being in the water for a few days, once we got out of the no-wake area, I would give it gas, it would bog and die. start right back up, and if I accelerated slower it was ok. It started to happen a little more often as our trip went on, on one outing, it stalled out 3 times no matter how slow I added throttle.
Then on the last day, when I drove over to the launch, had no problems at all. I am not sure where to look, bad gas(using 93 octane), dirty carb, clogged fuel filter, or that ethanol in the fuel crap?????
