Stalls off idle, and more

I bought a nice Sea Ray with a '97 Merc 125 O/B. Good compression in all cylinders. Runs well and strong, except...

Coming off idle (after the engine warms up) it will stall. Requires a good bit of lever movement forward to make sure it doesn't, so gentle starts are difficult. Then, it pulls reasonably well up to 3800rpm. At that point, approximately, it comes on the pipe and really accelerates. This is tough when pulling tubers as the kids' favorite speed is right around 3800-4000rpm.

Is this likely a tuning problem? Carb linkage problem? Or a cable problem? Where should I start looking?

When is the last time the carbs were given a good cleaning? Have you done a link&sync on the motor?

I have no idea. What's a link & sync? Is it doable by a reasonably adept mechanically-minded person without fancy tools? Or is it better left to a shop?

You can do it but you are going to need a manual

Someone posted the online manual, I have it. I assume that "sync" means to synchronize the carbs. But what's the "link" part? (So I'll know where to look in the manual.)
