SeaPro 17 Transom rebuild - weird structure

Greetings all,

I bought a 1991 17' SeaPro center console, with 85 hp outboard. It's not in very good shape and needs a transom, stringers and sole. The transom is rotted as I figured it probably would be. I'm now looking at cutting out the old transom, but I'm perplexed by two bizarre structures on the inside next to the transom. They look like cavities. I thought they might be filled with foam, but they have an odd shape. The one on the port side is attached to the transom, the one of the starboard side is not. I can't figure out what they are, and what the risk is of cutting them out of the way. I doubt there is any, since I'm ripping the insides out anyway, but I still want to know what I'm ripping out. I'm hoping someone here has an idea. Pictures are attached.

Its hard to say what they were trying to accomplish with those structures without talking to the person that designed it, but like you said, if you pull them out they can be replaced if needed
