Mercruiser won't go above 1000 rpm.

Help please. I have a 2016 repowered Mag 383 Stroker. It has less than 50 hrs on it. I use it every week in the summer and last week I tried to tow my son and the boat would not get on plane. It idled fine at 680 rpm. As soon as I try to accelerate, the boat stalls out. I have no alarms. I have done the following so far:
1. replaced fuel filter and water seperator
2. replaced distributor cap/rotor
3. replaced the spark plugs
4. cleaned the flame arrestor.
I have verified my fuel pressure is 42 psi at idle. It also stays steady around 40 psi when I try to accelerate. I tested my high pressure fuel pump by restricting the regulator return line and pressure rose to over 90 psi.

Any ideas where I go from here.

Did you check the gas in the water separator? Any water in there?
