Intermittent fuel supply issues

Morning all…
So I’m in Australia, so don’t have the best access to parts etc for my boat.
My issue is: Mercruiser 3.0l 2000 model engine that has been maintained well has an intermittent fuel supply issue.
I can run it in water in the backyard fine, I have checked timing, replaced filters, checked fuel pump (not pressure as don’t have a gauge), checked fuel lines by blowing down from fuel pump to tank and can hear the tank bubbling…
But, every now and then, after starting and idling fine, I can, sometimes (like 1 every 5 or 6 takeoffs), the engine bogs down and runs out of fuel. I then pump the throttle to get fuel in, can start normally, sometimes it’s fine then, other times it will cut out again.
I am not sure if it’s the fuel pump (mechanical type) that fails every now and then, or there’s something in the tank that blocks the intake at the right time (I’ve opened it up from the top and looked down but can’t see much), or something in the carb that blocks it.
I’ve rebuilt the carb before, but I’m thinking of getting some top engine cleaner (GM stuff or sea foam maybe?) and spraying down carb throat whilst running to stall, letting it sit and then running it through the cylinders?
It idles great at 650/700rpm, and most of the time it runs great.
But this has been going on for years and it’s maybe getting worse (not sure as I haven’t been able to use the boat as much), and I’m really unsure of what else to do?
Any ideas?
Also, any ways to find a leak in the power steering lines? It’s definitely leaking, into the bilge, but I can’t find it anywhere??

To eliminate the possibility that it is gunk in the tank periodically plugging the pickup tube, or an anti siphon valve sticking, if you can do so safely, run on the water on a remote tank or gas can with your fuel delivery hose in it.

Most marine manual fuel pumps leak back into carburetor, when defective. Is your FP marine or automotive. It may be leaking too much into carb.??? Most FTs have a screen inside of their pickup tubes. Remove screens and pitch them into the trash. Mine were partially clogged.
