I use beer and applejuice (no brine) for my smoked bird

smoker gets fired up at 8am tomorrow

will be 10# smoked bird, 22# oven roasted bird for 7 people.

No cooking for this guy this year....... headed over to my son's house. I sinceley hope EVERYONE has a SAFE and HAPPY Thanksgiving. I will be spending sopme time to remember the loved ones no longer with us.

White Bean Chili (a favorite of the Clark Lake deer hunting party – best when made during the following day. Serve with your favorite beer

TOOLS AND UTENCILES:
Smoker or Grill – Not required, however HIGHLY recommended to provide the flavor
Stew Pot (8 qt min)
Wooden spoon
Cutting Surface – Such as a butcher block
Large Knife
Garlic Press
INGREDIENTS:
2 Tbs Olive Oil
3 Jalapeno peppers finely minced
1 large Vidalia onion – coarsely chopped
1 Tbs ground cumin
1.5 Tbs ground coriander
2 Tbs minced Garlic
1 Tsp Sea Salt
1 Tsp Black Pepper
48 oz Chicken broth
48 oz jar of Northern Beans
26 oz can of Cream of Chicken soup
3 lb of smoked chicken or smoked turkey quarters skinned and shredded
¼ cup minced fresh Cilantro leaves
2 Scallions coarsely chopped
DIRECTIONS:
In the Stew Pot – Press or mince the garlic, add the olive oil, jalapenos, onion, cumin, coriander, salt and pepper. Sauté until the onion is translucent
Add the chicken broth, Beans, soup and smoked bird – bring to a simmer
Add the Cilantro and Scallions – Simmer for 30 minutes
Serve with Grated Mozzarella Cheese and Tortilla Chips. Wash down with a Leinie’s Sunset Wheat and enjoy.
