Characteristics of an over propped engine??

I have a 15 foot v hull bowrider with an older 100 hp Johnson outboard (87 model boat, 72 Model engine) I think I may have a prop problem. The boat runs and planes fine -MOST- of the time when it is just my wife and I and our two small children. But when more adults get on the boat it really struggles. It feels like the engine bogs on acceleration when more weight is on the boat, but the confusing part is it does it sometimes when it is just me.I can put the boat in neutral and rev it up a time or two to "clear it out" and that seems to help. In comparison to a car, it feels and seems like it is "loading up". And at other times it runs great all day long. The tach does not work so I do not know my RPM's and I have had the compression checked and it is 125 across all four cylinders. It does not have elctric tilt and trim, so I have the cavitation plate even with the bottom of the hull. I do have a dorphin on the engine also. Does this sound like an over propped engine? What are the characteristics of an over propped engine? Any ideas???

The Tach will help. If it doesn't come close to the Red Line for that motor at Wide Open Throttle, chances are you are over propped or over pitched.
